Flax oil is the richest plant source of omega-3; over 50% of its fats are ALA. The human body converts ALA to the longer-chain omega-3s eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), which are also found in fish. Omega-3 fatty acids form part of cell membranes and phospholipids and have anti-inflammatory properties. The typical Western diet comprises an omega-6 to omega-3 ratio of between 10:1 and 20:1, but a ratio of 4:1 is desirable. Flax oil has a ratio of 0.3:1. Adequate intake of ALA ensures the availability of omega-3 substrates for the cyclooxygenase (COX) and lipoxygenase (LOX) enzymes, which determine the balance of eicosanoids and other anti-inflammatory messengers in the body.
